Self-taught. No apprenticeship. No institutional path. Just Bresse chicken, frog legs, cream, and an absolute refusal to compromise on ingredients.

Élisa Blanc, la Mère Blanc, earned her first Michelin star in 1929, won the Touring Club de France culinary prize in 1930, her second star in 1932. In 1933 Curnonsky, the most respected food critic in France, named her the best cook in the world.

The restaurant she built in Vonnas is the most continuously Michelin-starred establishment in the world.

Her grandson Georges Blanc carried it to three stars.

The foundation she laid has now held for nearly a century.
