Born in Orthez in southwestern France, he began working for Gaston Lenôtre during the summer months. He then became an assistant at the Moulin de Mougins under legendary chef Roger Vergé, creator of Cuisine du Soleil, and learned the Provençal cooking methods for which he would become known.
In 2012, he held 21 Michelin stars, making him the second highest ranking chef in the world in terms of total Michelin stars.
Alain Ducasse said: “Everywhere in the world there are tensions – economic, political, religious. So we need chocolate.”
